Soup Recipes from the Polish American Cultural Institute of Minnesota and
Friends.
For eighteen years now the Polish American Cultural Institute of Minnesota
has organized its annual Soup Fest which features a dozen or more
traditional Polish soups, from the hearty Bigos (hunter’s stew) to the light
and delicate summer cold Blueberry soup. The Fest celebrates the role that
soup has in Polish cuisine….a must for every meal.
Over the years many people clamored for the recipes, so much so
that the Polish American Cultural Institute of Minnesota has now published
its own Polish Soup Cookbook: Zupa! After a wildly successful first edition,
we have printed a second edition which includes a page of “Polish Soup
Secrets.”
Zupa! has 39 soup recipes from Barley soup (krupnik) to Yellow Pea soup (Zupa
grochowka) and 5 summer cold soup recipes. It also has 11 additional recipes
for Polish comfort food basics: Dumplings (kluski), Uszka and, of course, Pierogi. Many recipes include short stories and tips from the chefs
themselves.
